Sgroppino (pronounced sgro-PEE-noh) is a silky Italian cocktail made with just three ingredients: lemon sorbet, prosecco or  Franciacorta, and a splash of vodka.

It originated in Venice, where the word sgropin means “to untie a knot,” a playful reference to loosening the stomach after a big meal. Traditionally, Venetians would enjoy this frothy cocktail as a digestivo or a palate-cleansing intermezzo between courses.

Yes, use sparkling lemonade or non-alcoholic bubbles and skip the vodka.

Why use Franciacorta instead of Prosecco?
Franciacorta is produced with the same traditional method as Champagne, creating finer bubbles and a more luxurious taste. It gives it more body and less sugar which I prefer but if you like prosecco go for it!

What’s the best sorbet to use?
A tart lemon sorbet creates the perfect balance. I used Talenti.

Description

A bright and festive Italian cocktail made with lemon sorbet and Franciacorta. This Sgroppino adds a burst of sunshine to winter gatherings that’s refreshing, elegant, and perfect for holiday entertaining or as a palate cleanser between courses.


Ingredients

For 1 drink:

  • 1/2 cup lemon sorbet (homemade or store-bought)

  • 4 ounces of chilled Franciacorta or Prosecco

  • 12 ounces vodka


Instructions

  1. Add lemon sorbet and vodka to a blender.

  2. Slowly pour in the Franciacorta (or prosecco) and blend until creamy and frothy.

  3. Pour immediately into chilled coupe or flute glasses.

  4. Garnish with your favorite festive touch. I used thyme and pomegranate seeds.


Notes

For a softer flavor, swap vodka for limoncello it adds sweetness and depth.

Serve as a palate cleanser cocktail between courses for a luxurious touch.
